Parmesan Chicken Sheet Pan

This recipe checks all the boxes for me: easy, nutritious, affordable, and delicious. I originally adapted it from a local grocery store nearby and I hope you enjoy it as much as we do!

Ingredients

2 pounds chicken breast, cubed into 1-inch pieces

2 cups broccoli florets

1 red onion, roughly chopped

1/2 cup pesto

1/2 cup shredded parmesan cheese

2 T olive oil

1/2 to 1 tsp salt

1/2 tsp garlic powder

1/2 tsp black pepper

Instructions

Pre-heat your oven to 400 degrees and line a large baking sheet with parchment paper or foil. Toss the chicken, broccoli, red onion, and parmesan together and spread over the pan evenly. In a small bowl, mix the pesto, oil, and seasonings. Pour the mixture over the baking sheet and toss everything together. Roast for twenty minutes or so, until the chicken is cooked through. You can serve this so many ways, but we had it with mini penne and it was just perfect. This yielded 5 large servings.
