Are you nosy like me? Or do you just need dinner inspiration? Either way, here’s what we had last week for dinner!
Night One: We had bread pudding with a Denver egg scramble. The bread pudding was sweetened with peach preserves and maple syrup. A Denver egg scramble is my lazy take on my favorite omelet. It has diced bell peppers, onion, ham, and cheddar cheese.
Night Two: One of my favorite instant pot recipes: parmesan risotto! We had steamed broccoli mixed into this and served it with some chicken cooked in avocado oil, seasoned with lemon juice, salt and pepper.
Night Three: Pizza night! I made two kinds: margherita and bbq chicken. They both were a hit, and I served them with fresh strawberries.
Night Four: This was an unplanned bean burrito night, because my husband was in a car accident, and I had to unexpectedly pack up the kids and go get him off the side of the road. (He’s fine, thank God). We had simple bean burritos, chips, and grapes.
Night Five: I created a random Tuscan-y pasta with bucatini, white beans, shredded carrots, and bacon. I made a simple cream+parm sauce and served it with an herby bread. It was supposed to be a focaccia, but it came out more like a super soft and yummy dinner roll/focaccia hybrid. This was a great budget meal for us because I could use hardly any bacon and still get good flavor.
Night Six: This night we had teriyaki beef over steamed white rice with a side of grapes and carrot sticks. I love having this with roasted broccoli, but fresh broccoli not in season right now. I made double of this and portioned it out for my husbands lunches for the week as well.
Night Seven: I was a little short on groceries for this dinner, but I managed to find enough to make a pretty good meal. Stuffed peppers with corn bread and a side of applesauce.
