If you are lucky enough to have leftover mashed potatoes, you have to try this side! My kids say they taste like tater tots. If you want to add meat, it could be a full meal with a side of veggies.
- 2 cups leftover mashed potatoes
- 1 cup flour
- 2 eggs
- 1 cup shredded sharp cheddar
- 1 tsp salt
- 1/2 tsp pepper
- Avocado oil or tallow for frying
While you make the batter, go ahead and put the oil in your pan to heat up, over medium-heat. I used an 8-inch cast iron skillet for this and about 1/4 inch of oil. For the batter, mix up the leftover mashed potatoes, flour, eggs, cheddar, salt, and pepper. Make sure your oil is hot enough before you start to fry these. There are a few different ways, but my favorite is to drop a tiny piece of the batter in (a sacrificial piece) to see if it bubbles up the way I want it to. Using a cookie scoop, drop the dough in. Flip after four minutes and squish down gently to make a patty shape. Cook the other side for four minutes and remove to a cooling rack thats sitting over some paper towels or a dish cloth your don’t mind oil dripping onto. We don’t eat fried food often, but when we do, it’s something delicious like this.
