Blueberry-Orange Crisp

This is the perfect winter dessert because it uses frozen blueberries and in-season citrus. We all adored it.

Ingredients (For the filling)

  • 3 cups of frozen blueberries
  • The juice and zest of one large orange
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • Pinch of salt

Ingredients (For the topping)

  • 3/4 cup flour
  • 1/2 cup brown sugar
  • 3/4 cup oats
  • 1/2 cup melted butter

Instructions

Pre-heat your oven to 375. In a saucepan, bring the filling ingredients up to a boil, then lower to a simmer, stirring frequently. Let it simmer for 20 minutes or so, until thick. You could do a cornstarch slurry if the thickness isn’t to your liking (1/4 cup cool water to 2 T cornstarch, mix then add into the hot filling mixture). Mix the topping ingredients in a small bowl and set aside. Use a square casserole dish (8 by 8 or 9 by 9, it’s about the same for this recipe), and smooth the filling into the bottom. Top with the struesel goodness and bake for 30 minutes. Serve to your family on a weeknight. Impress them all.
