Elderberry Syrup Recipe

Ingredients

  • 1/2 cup dried organic elderberry 
  • 5 whole cloves 
  • 1 tsp ground cinnamon 
  • 1/2 tsp ground ginger 
  • 1 star anise 
  • 2 cups water 
  • 1 cup raw honey 

Add the water to the elderberry, cloves, cinnamon, ginger, and anise. Bring the liquid to a boil over medium-high heat. As soon as the liquid is bubbling, lower the heat and let it until the syrup is reduced by half, about 25 to 30 minutes. Stir frequently. Strain and add the raw honey, mixing well. I like to really squeeze the berries by pressing the mixture against the fine mesh strainer with a wooden spoon to get all the syrup out. This keeps for two weeks or so in the fridge.

*This makes approximately 2 cups of syrup

*If you have fresh ginger or cinnamon sticks, that’s all the better!
