Transform Leftover Oatmeal into Tasty Muffins

Do you lovingly make your kids a beautiful pot of homemade stovetop oatmeal? Do they sometimes spurn your efforts, leaving said pot of oatmeal nearly full? If so, this kinda-recipe is for you!

Ingredients

  • 1 cup leftover oatmeal 
  • 1 cup self rising flour 
  • 2 eggs 
  • 1/4 cup milk 
  • 1/4 cup maple syrup 
  • 1/4 tsp salt

Instructions

Make oatmeal for someone you love. Make way too much. Set aside one cup of the cooked, leftover oatmeal. When you have time, pre-heat your oven to 350 and line 12 muffin tins with silicone muffin cups for easy clean-up. In a medium bowl, mix all your ingredients up until it’s a good muffin-batter consistency. You might need to adjust the sweetness, depending on how sweet your original oatmeal was. Portion your batter into the 12 muffin cups and bake for 20-25 minutes. Watch your friends and family devour the muffins, and feel a little bit smug about not wasting food.
