Cucumber-Tomato Salad

This is just about the most simple salad I can think of, and barely needs a recipe. Summer is the optimal time to make it, when tomatoes are at their peak ripeness and cucumbers are extra- crunchy. It’s an easy side for pretty much any occasion and it never disappoints. If you add fresh mozzarella and balsamic vinegar, it’s a caprese dream, but this basic version is great too.

Ingredients

  • 1 cup chopped tomato ( about 2 Romas)
  • 1 cup cucumbers, quartered then chopped
  • Approximately 10 fresh basil leaves, rolled up and sliced into thin strips
  • 1/4 tsp salt

Instructions

  • Mix your ingredients. Truly, that’s all. The more ripe and in-season your tomato, the better; it will do all the work.
