Cajun Fried Rice

This is a meal that came together so beautifully one weekday, using leftover cooked rice. My husband, knowing me and my reluctance to follow a recipe, turned to me while he was eating it and said, “Did you write down how you made this?” No. The answer was no. But I got up right then and wrote down what I did before my memory failed me, and since then I’ve made it twice more with grand success. It’s affordable, it’s different, and it’s delicious. Here you go! (Gentle reminder that I am not a professional recipe-writer)

Ingredients

  • 1/4 cup butter
  • 2 cups steamed white rice
  • 1 smoked sausage; I used beef (12oz)
  • 1 pound frozen raw shrimp, tail on but shelled and de-veined.
  • 1/2 cup lemon juice
  • 1 tsp Old Bay seasoning
  • 1 tsp garlic powder
  • 2 cups frozen corn
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp MORE Old Bay

Instructions

In a bowl, mix together the lemon juice, garlic powder, and 1 tsp Old Bay seasoning. Toss the shrimp in it, still frozen is fine. As that is marinating (10-15 minutes total), slice the sausage into coins and melt the butter in large skillet or braiser. Add the sausage, rice, corn, and other seasonings to the pan. Kind of scoot the rice mixture to the sides and add in the shrimp, letting it cook about 4 minutes per side. Mix everything up and enjoy with crusty bread and a simple salad. If you don’t live with haters, add some diced tomato.
