The other day, I shared how to cook beans in the pressure cooker. I wanted to share our favorite way to enjoy beans: the humble but scrumptious bean burrito! The best and easiest way to make refried beans is to simply put the whole beans in a pot and mash them with a potato masher. I don’t add any oil or lard and I’ve never had any complaints. Rolling a burrito can be tricky, but here is my method:

Step one: Place your filling slightly off center in a thick line. Fold up the sides.

Step 2: Fold up from the bottom

Step 3: THE MOST IMPORTANT STEP!!! Tuck in the sides again.

Step 4: Finish rolling the burrito tightly and place seam side down in a hot skillet. I usually use cast iron. You don’t need oil, you just want to lightly toast the seam side and then the opposite “top” side.

Step 5: Eat your delicious burrito.
