Summer mornings should feel slow and sweet, not rushed and stressful. Whether you are wrangling kids, getting ready for work, or enjoying a more relaxed schedule, having a few go-to breakfasts that are simple and nourishing can make a big difference.
Here are seven of our favorite summer breakfast ideas. Each one is easy to make, full of good ingredients, and perfect for warm mornings.

1. Overnight Oats
These are a lifesaver during hot weather. You prep them the night before, and in the morning you have a cool and creamy breakfast waiting in the fridge.
Try these combinations:
- Berry and almond with strawberries, blueberries, and sliced almonds
- Chocolate and banana with a spoonful of cocoa powder and peanut butter
- Mango and coconut with diced mango, shredded coconut, and a splash of coconut milk
Let the kids help mix their own jars and choose their toppings.
2. Greek Yogurt Parfaits
Layer Greek yogurt with granola and fresh summer fruit like peaches, berries, or bananas. Add a drizzle of honey or a spoonful of nut butter for extra flavor and energy.
This is a great option for kids to assemble themselves. You can even set up a little topping bar if you are feeling fun.
3. Smoothie Bowls
Smoothie bowls are just a thicker smoothie poured into a bowl and topped with your favorite things. They look fancy but are surprisingly quick.
Base idea:
Blend frozen fruit with Greek yogurt or your choice of milk. Add a handful of spinach or a scoop of nut butter if you want a nutrient boost.
Topping ideas:
Granola, sliced banana, berries, nuts, coconut flakes, sunflower seeds
4. Avocado Toast with a Twist
The classic gets a summer spin. Use whole grain toast and mashed avocado, then add:
- Cherry tomatoes + salt + hemp seeds
- Microgreens + feta cheese
- Sliced radishes + everything bagel seasoning
- A soft-boiled or poached egg for extra protein
Simple, cool, and surprisingly filling.
5. Banana Pancake Bites
Did anyone else have these on repeat when doing baby-led-weaning? Two ingredients: mashed banana and eggs. That’s it! Whisk together and cook silver-dollar-sized pancakes in a skillet. Sometimes I add a dash of cinnamon.
These are soft, sweet, and easy for little hands to grab. Serve with:
- Nut butter mixed with honey
- Plain Greek yogurt
- A side of berries
Make extra and reheat throughout the week.
6. Breakfast Quesadillas
Stuff a whole wheat tortilla with scrambled eggs, shredded cheese, and baby spinach or bell peppers. (To be honest, my kids would cry if I gave them bell peppers, but I think it’s a good idea to keep trying, and I love it).
Toast on both sides, slice into triangles, and enjoy warm or cold. They pack well for on-the-go mornings too!
7. Mini Egg Muffins
These protein-packed bites are perfect for batch cooking, and my husband even loves to have them as a nighttime snack. Whisk together eggs, pour into a muffin tin, and add your favorite mix-ins like:
- Diced ham + cheddar + spinach
- Bell pepper + onion + mozzarella
- Crumbled bacon + tomato + basil
- When in doubt, just do cheese
Bake, store in the fridge, and pop in the microwave as needed.
