Nutritious One-Pot Canned Chicken Soup

Let’s all be open-minded about canned chicken for a moment.
This might be the easiest soup you’ll ever make. I throw together some version of it almost every week for lunch because it’s quick, cozy, and surprisingly nutritious. No need to drain the cans, seriously, just dump everything straight into your pot. You probably won’t even need salt, but give it a taste and adjust if you like. That’s it. Ridiculously simple, but it hits the spot every time.

Ingredients

  • 1 cup salsa (I use mild)
  • 1/2 an onion, diced
  • 1 can of corn
  • 1 can of chicken (12.5oz)
  • 1 can of beans, pinto or black
  • 1/2 cup water
  • salt, to taste

Instructions

Chop your onion and add it into a pot with the rest of the ingredients. Don’t drain any of the cans, including the canned chicken. So much flavor there! Bring to a boil, then reduce to a low simmer for about twenty minutes. Taste for salt. You can eat it just like that, or you can serve with tortilla chips, cheese, maybe some avocado, and marvel at how simple this was.
