Kid-Approved Breakfast: Cheddar Sausage Biscuits Recipe

Ever in the hunt for easy, non-messy breakfasts, this is what I came up with. They’re handheld, can be made ahead, can be frozen as raw dough, and are kid-approved.

Ingredients

  • 2 cups self-rising flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar
  • 2 eggs
  • 1/4 cup mayonaise (not miracle whip!)
  • 1/2 pound ground breakfast sausage, cooked
  • Melted butter, for brushing on top once done

Instructions

Pre-heat oven to 400 degrees. Mix ingredients together in a medium sized bowl and use a scoop to plop the servings out onto a parchment-paper lined baking sheet. I use my biggest one, but you might have to use two-these are hefty! If you want to freeze them, put the baking sheet in your freezer now for a few hours, then place the frozen dough pucks into a gallon freezer bag to store. If eating freshly made, bake for 18-ish minutes and brush with melted butter when done. Delicious! My kids say they kind of taste a Mcdonald’s sausage biscuit.

When baking from frozen, pop a dough puck into the oven (on a parchment paper pan), for 23-25 minutes.

About Me

Hello friend, my name is Katie and pizza is my favorite food. Yes, I’m in my thirties and yes, I have three daughters that I’m raising and homeschooling and nagging, but I think you’d be most interested to know that I would eat pizza for every meal of every day and never complain. There was a brief time (ages 8-11) when I thought that mashed potatoes was my favorite food, but I’ve since come around. That being said, I don’t only talk about pizza. Here you will find slices of homeschooling life, home decor, cooking, musings, and an occasional funny meme. In fact, I think you will find a shocking lack of pizza content as a whole, but now you know the truth: Pizza is always close to mind.
