I kept track of everything my family of five ate for dinner for 28 days, and I thought it might be fun to share the whole thing.
I love to cook. I genuinely enjoy being in the kitchen and making dinner for my family. But I also have three kids, we homeschool, and I have approximately 47 other things going on at any given time, so dinner isn’t going to be a three-hour production every night.
My general goal is pretty simple: make something good, make it from scratch when I reasonably can, and get it on the table in about 30 minutes to an hour.
I don’t really follow recipes most nights. I tend to cook pretty intuitively: whatever sounds good, whatever needs to be used up, whatever I have in the pantry, and whatever my family will actually eat.
So I decided to write down what we actually ate for 28 days. I kept it very realistic (see day 23)!
Without further ado, here’s the round up:
- Cajun Fried rice
- Peach pulled pork: such a good recipe! We froze half for another dinner.
- Homemade pizza night: We did canadian bacon, sausage, veggies, and figs in a variety of ways.
- Basil-lemon salmon: This was so good, and I used the leftover basil-lemon butter to make sourdough crackers the next day.
- Baked Mac n Cheese with Grilled Chicken
- Teriyaki Beef Bowls: a family staple.
- Sloppy Joes with Cottage Fries: My Aunt Wilma’s recipe.
- Chicken Tikka Masala: a simple jarred simmer sauce served with rice and cucumbers
- Sausage-Cheddar Quiche: a great way to use up leftover sausage from homemade pizza night.
- Pinwheel Tacos (Snail Tacos), beans and rice
- Fish and Chips with Blueberry Scones
- Creamy Peach Chicken a la Farmhouse on Boone. I adjusted it by using chicken thighs instead of breasts, using more white wine in the sauce, and using fresh basil at the end.
- Pork Fried Rice ( I used leftover canadian bacon from pizza night lat week)
- Sundried tomato and basil orzo chicken
- Fake Chick Fil-A, then when the kids went to bed we ordered sushi
- BBQ chicken, biscuits, corn on the cob. I cooked all the chicken I need to use throughout the week this night as well.
- Chicken and Penne in a Vodka Cream Sauce
- Breakfast for dinner : Cinnamon rolls, ham, strawberries and eggs
- Date night! We went to our favorite restaurant: Wine Wood.
- Sweet Potato and Ham Hash with Cornbread (Ham from a few nights ago)
- Rice, bean, and pulled pork bowls (From freezer pulled pork)
- Herbed Chicken and Mac n Cheese
- McDonalds. Just keeping it real over here.
- DIY Hamburger Helper (Cheesy Beef Rotini)
- Apricot Chicken, roasted squash, wild rice via Uncle Ben
- Fajita Chicken and Broccoli Alfredo
- Cajun dirty rice, biscuits, green beans
- Garlic shrimp with parmesan risotto
